Eggless Chocolate Chip Cookies


I don't do a lot of baking.  I prefer cooking to baking.  BUT, I have a wicked sweet tooth and will bake from time to time to satisfy the monster inside me.  Eggless Chocolate Chip Cookies are my favorite chocolate chip cookie.  They have just a hint of a crunch, yet their soft and chewy at the same time.  Here's the bonus: they don't have any eggs in them so you can eat the dough to your hearts content!

I first tasted  these cookies when I was 15 years old - I had gone to a friends house and her mother made them.  I was immediately infatuated...with these cookies as well as boy down the street.  Time marched on and my infatuation with the boy quickly faded, however my affection for these cookies endured and turned into a full fledged addiction. 


Eggless Chocolate Chip Cookies
1 cup butter, softened
1 cup vegetable oil
1 cup brown sugar, packed
1 cup sugar
1 tsp vanilla
3 1/2 cup flour
1 1/2 tsp salt
1 tsp soda
1 tsp cream of tarter
1 cup coconut
1 cup oatmeal
1 cup rice crispies
1 1/2  cup chocolate chips

Preheat oven to 350 degrees.  Then, in large mixing bowl:

Begin with Butter (the original recipe called for margarine, but I don't buy margarine...I LIKE BUTTER!)


Add oil and mix

Add brown sugar and mix

Add granulated sugar and mix

Add vanilla and mix

Mix dry ingredients together.  Add dry ingredients a spoonful at a time and mix just until incorporated

Add coconut and mix

Add oatmeal and mix

Add rice crispies and mix

Add chocolate chips


Mix by hand until incorporated

With a small/medium scoop, make cookie balls

Bake for 10-12 minutes

Serve & Enjoy!


 Makes 5 dozen (if you don't eat all the cookie dough first!)
